| 0,5 l rapeseed oil | 1 toast veal of 500g |
| 1 egg yolk | 1 clove of garlic |
| 1 tbsp of mustard | 3 bay leaves |

| 1 tbsp white vinegar | 6 sprigs of thyme |
| 50gr chopped capers | Peppers |
| 15gr chopped anchovies | Coarse salt |
| 1 can of tuna in oil |

| 2 tbsp of roast veal cooking juice |
|
| Salt and pepper |

Preparation of the tuna sauce :
- Make a mayonnaise or take one already prepared :
- In a large plate (salad type), put the egg yolks and mustard
- Beat with an electric mixer or a spoon, gradually adding the oil until obtaining the right texture, and adding vinegar
- Add the tuna, capers, anchovies
- Mix well
Preparation of the roast veal :
- Prick the roast veal with the garlic
- Put the roast in a plate for the oven
- Add the bay leaf, the coarse salt and pepper
- Put in the oven for 1 hour
- After cooking, cut thin slices
Don’t forget to turn the roast every 10 min.
N.B.: the cooking time can vary depending on the size of the roast !!!
